Tortilla Quiche (3 points)

2 servings (1/2 each)


Ingredients:

1 la tortilla keto friendly tortilla, 7.5"

2 large eggs, beaten

1/4 cup fat free cottage cheese

1/4 cup chopped frozen spinach, thawed

1 tbsp light kraft parmesan cheese

1/2 tsp italian seasoning

37g no name light mozzarella cheese, shredded


Directions:

Preheat the oven to 375F. Prepare a 6" baking dish by lightly spraying it with oil. Place a 7.5" tortilla into the dish with some coming up the sides, evenly. Lightly spray with oil.

In a bowl, mix together the eggs, cottage cheese, parmesan cheese, spinach and italian seasoning.

Pour into the tortilla, Sprinkle on the mozzarella cheese.

Bake for 30-35 minutes or until the cheese is melted, the eggs set and cooked through.
