Turkey Artichoke Soup (2 points)

8 servings (2 cups each)


Ingredients:

1 cup onion, diced

1 tbsp minced garlic

1 cup carrots, sliced

1 cup celery, sliced

2 cups turkey breast, chopped

6 cups fat free chicken broth

2 tsp italian seasoning

3/4 cup uncooked wild rice

2 bay leaves

1 tsp onion powder

1 tbsp fresh lemon juice

2, 14 oz cans artichoke hearts (without oil), drained and chopped


Directions:

Place all the ingredients into a large soup pot.

Put on the stove, over high heat and bring to a boil. Cover and turn the heat down to medium and simmer until rice is done, about 45 mins.

Remove bay leaves and serve.
