4 servings (1 cup each)
Ingredients:
1 lb turkey "chorizo" sausage (see recipe)
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup green pepper, chopped
1 tsp garlic, minced
1 10 oz can sliced mushrooms
1 14 oz can tomato sauce
1/2 tsp dried oregano
1/2 tsp dried basil
Directions:
Add turkey "chorizo" sausage (see recipe) to a large sprayed saucepan and heat on medium high heat.
Cook the meat until browned, breaking it up with a wooden spoon, about 5-7 minutes.
Add the onion, celery and green pepper. Continue cooking for another 2-3 minutes. Add the garlic and cook for another minute.
Add the mushrooms, tomato sauce and spices.
Heat up to a boil and turn down to a simmer. Simmer for about 20 minutes.
Note: You could also use ground chicken breast.
Suggested Serving: Serve over squash, shirataki or palmini noodles.
