Twice Baked Cauliflower (5 points)

Ingredients:

8 oz cooked cauliflower, mashed

2 oz 0% siggi's yogurt

1/2 tsp greek seasoning

1 oz cheese


Directions:

Preheat oven to 350F. Prepare a 2 cup ramekin or small baking dish by lightly spraying it with oil.  Set aside.

Combine the cooled mashed cauliflower with the yogurt and greek seasoning.

Add the mixture to the prepared dish and top with the cheese.

Bake for 30 minutes. Turn the broiler on at the end to turn so the cheese turns golden brown.

Suggested Serving: Excellent side dish.
