Vanilla Protein Cheesecake (2 points)

2 servings (1/2 loaf each)


Ingredients:

3/4 cup fat free cottage cheese

1/4 cup 0% siggi's yogurt

8g good protein creamy vanilla protein powder

1 tbsp cornstarch

1 large egg

1/4 tsp vanilla extract

2 tsp date powder

1 sheet low fat graham wafer


Directions:

Preheat the oven to 350F. Prepare a mini loaf pan (6x3x2") by lining it with parchment paper and lightly spraying it with oil. Set aside.

Add all the ingredients (except the cracker) to a blender and blend until smooth.

Place the graham cracker in the bottom of the prepared pan.

Pour the batter on top of the cracker and bake for 40-45 minutes.

Let cool completely in the pan. Lift out by the parchment paper.
