Zucchini Pizza (3 points)

4 servings (1/4 large or 1 small round)


Ingredients:

1 medium zucchini, shredded, wrung out

4 tbsp spelt flour

1 tsp italian seasoning

1/2 tsp garlic powder

2 eggs

4 tbsp light italian dressing

88g no name light mozzarella


Directions:

Preheat the oven to 400F. Prepare a baking sheet by lining it with parchment paper. Lightly spray with oil. Set aside.

Lay out a kitchen towel and grate your zucchini onto the towel. Gather the sides and squeeze out the excess liquid over the sink. Put the zucchini into a medium bowl. Set aside.

Beat 2 eggs and add them to the bowl, along with the flour, italian seasoning and garlic powder. Mix well.

Transfer the mixture to the baking sheet and form into a large round or 4 small ones. Lightly spray the tops with oil.

Bake for 10-15 minutes or until the edges are lightly browned and the crust is firm.

Remove from the oven, add the italian dressing and spread to cover. Sprinkle the cheese evenly over the top.

Return to the oven and bake until the cheese is melted.


Suggested Serving: Serve as an appetizer or as a meal with side salad or soup.
