Ingredients:
2 large chicken breasts, chopped
1/2 onion, chopped
1 small zucchini, sliced
2 medium carrots, sliced
1 cup black beans, drained and rinsed
1 tbsp olive oil
1 tsp ground cumin
1 tsp ground tumeric
1 tsp ground cinnamon
1/2 tsp garlic powder
1/2 tsp table salt
Directions:
Preheat the oven to 400F. Prepare a baking sheet by lining it with foil. Set aside.
To a large bowl, add all the ingredients and mix them until well combined.
Pour onto the prepared pan.
Bake for 25-35 minutes, rotating the pan halfway through, or until the veggies are fork tender.
